FAQ

Why can't I convert ml to g directly?
Volume and mass require an ingredient density (g / ml). Water is 1 ml = 1 g, but flour is ~125 g per US cup (240 ml) and sugar is ~200 g — wildly different. Rather than approximate via water, we keep them in separate categories.
What are the Japanese 小さじ / 大さじ / カップ values?
Under the JAS (Japanese Agricultural Standard): teaspoon (小さじ) = 5 ml, tablespoon (大さじ) = 15 ml, cup (カップ) = 200 ml. (The rice gō, 合, is a separate 180 ml unit.)
How do US tsp / tbsp / cup differ from the Japanese versions?
US tsp = 4.93 ml (≈ Japanese tsp 5 ml), US tbsp = 14.79 ml (≈ Japanese tbsp 15 ml), but US cup = 236.59 ml is ~18% bigger than the Japanese 200 ml cup. The cup difference is large enough that a US recipe measured with a Japanese cup will come out diluted.
What is 合 (gō)?
A traditional Japanese volume unit, mainly used for rice. 1 gō ≈ 180 ml — the cup that ships with a Japanese rice cooker. Easy to confuse with the 200 ml general-purpose cup.
What's the difference between oz and fl oz?
In US recipes solids (meat, flour, cheese) use oz / lb (mass) while liquids use fl oz (volume). They are different physical quantities, despite both being called 'ounce'. This tool puts oz / lb under Weight and fl oz under Volume.
